Wilted Cabbage Salad

3 slices bacon

1/4 cup chopped onion

2 tablespoons vinegar

2 tablespoons water

1 tablespoon sugar

1/2 teaspoon salt

1/8 teaspoon pepper

1 small head cabbage, shredded (about 4 cups)

1 apple, peeled, cored, and finely chopped (1 cup)

In skillet cook bacon till crisp; drain, reserving 3 tablespoons drippings. Set bacon aside. Add onion to drippings and cook till tender. Stir in vinegar, water, sugar, salt, and pepper; bring to boiling. Add cabbage and apple; toss to coat. Cover and cook over medium heat about 5 minutes or till cabbage is just wilted. Crumble bacon over top and serve. Makes 6 to 8 servings.
