Tomato Soup Salad1 10 3/4-ounce can condensed tomato soup 1 envelope unflavored gelatin 1/4 teaspoon salt 1 cup cream-style cottage cheese 1/4 cup mayonnaise or salad dressing 1 cup chopped celery 1 cup chopped radishes 1/2 cup chopped cucumber 2 tablespoons sliced green onion In medium saucepan stir together soup, gelatin, and salt; let stand 10 minutes to soften gelatin. Stir over low heat till gelatin dissolves. With rotary beater or electric mixer, beat in cottage cheese and mayonnaise or salad dressing. Chill mixture till partially set. Fold in celery, radishes, cucumber, and green onion. Pour into 4-cup mold. Chill till firm. To serve, unmold onto serving platter. Makes 6 to 8 servings. |
