South American Mixed Salad

1 medium cucumber, peeled

2 large bananas, sliced

2 sweet red or green peppers, cut in thin strips

1 avocado, seeded, peeled, and sliced

1/2 small onion, sliced and separated into rings

1/3 cup vinegar

1/4 cup olive or salad oil

1/2 teaspoon salt

1/4 teaspoon bottled hot pepper sauce

Halve cucumber lengthwise; remove seeds and slice crosswise. Arrange cucumber, bananas, peppers, avocado, and onion in salad bowl. To make dressing, in screw-top jar combine vinegar, oil, salt, and bottled hot pepper sauce. Cover and shake to mix well. Pour dressing over vegetable mixture; toss to coat. Cover and refrigerate 1 to 2 hours. Makes 8 servings.
