Sauerkraut Salad

1 16-ounce can sauerkraut

1/4 cup finely chopped celery

1/4 cup chopped onion

1/4 cup shredded carrot

3/4 cup sugar

1/4 cup vinegar

Drain and snip sauerkraut, reserving liquid. Rinse sauerkraut under cold running water. Drain well. Combine sauerkraut, celery, onion, and carrot. In saucepan combine reserved sauerkraut liquid, sugar, and vinegar; bring to boil, stirring constantly. Remove from heat; pour over vegetable mixture. Toss to coat vegetables evenly. Chill several hours or overnight. Makes 6 servings.
