Salad: Sweet-Sour Swiss Chard

6 cups torn Swiss chard

6 slices bacon

1/2 cup sliced green onion

4 teaspoons sugar

2 teaspoons all-purpose flour

1/2 teaspoon salt

1/3 cup water

1/4 cup vinegar

Place torn chard leaves in large salad bowl; set aside. In skillet cook bacon till crisp. Drain bacon, reserving 1/a cup of the bacon drippings. Crumble bacon and set aside. In same skillet cook onion in reserved drippings over low heat till tender but not brown. Blend in sugar, flour, and salt; stir in water and vinegar. Cook and stir till thick and bubbly. Pour hot mixture over chard, tossing to coat leaves. Sprinkle with crumbled bacon. Serve immediately. Makes 4 to 6 servings.
