Salad: Spinach-Apple Toss

1/2 cup salad oil

1/4 cup lemon juice

1 tablespoon sliced green onion

1 teaspoon sugar

1/2 teaspoon dried mint, crushed, or 1 tablespoon fresh mint, chopped

10 ounces fresh spinach, torn (about 8 cups)

2 medium apples, cored thinly sliced

1 small cucumber, thinly sliced

1/3 cup sliced radishes

2 tablespoons shelled sunflower seed

In a screw-top jar combine oil, lemon juice, onion, sugar, mint, 1/2 teaspoon salt, and dash pepper. Cover; shake well. Chill. In a large salad bowl combine spinach, sliced apple, cucumber, radishes, and sunflower seed. Shake dressing; pour over salad. Toss to coat. Makes 8 to 10 servings.
