Salad: Broccoli ring1 10-ounce package frozen chopped broccoli 1 envelope unflavored gelatin 1/2 cup water 1 10 3/4-ounce can condensed chicken broth 2/3 cup mayonnaise or salad dressing 1/3 cup dairy sour cream 1 tablespoon finely chopped onion 1 tablespoon lemon juice 3 hard-cooked eggs, chopped Cook broccoli according to package directions; drain well. Chop broccoli fine. Meanwhile, in medium saucepan soften gelatin in water; add chicken broth. Heat and stir till gelatin is dissolved. Add mayonnaise, sour cream, onion, and lemon juice; beat smooth with rotary beater. Chill till partially set. Fold chopped eggs and broccoli into gelatin. Turn into 4-cup mold. Chill till firm. Unmold onto serving plate. Makes 8 servings. |
