Rainbow Compote1/2 cup honey 2 tablespoons lemon juice 1 tablespoon finely snipped candied ginger (optional) 1 teaspoon finely shredded orange peel 4 oranges, peeled and sliced crosswise 11/2 -cups blueberries 2 cups cubed honeydew melon 11/2 cups halved strawberries Whole strawberries Combine honey, lemon juice, candied ginger, and orange peel. Pour dressing over orange slices in bowl; cover and refrigerate for several hours or overnight. Chill the remaining fruits. Drain oranges, reserving dressing. Arrange orange slices in bottom of compote. Top with a layer of blueberries, a layer of melon cubes, and a layer of halved strawberries. Pour the reserved dressing over fruit. Garnish with additional whole strawberries, if desired. Makes 10 servings. |
