Fruited Avocado Freeze1 large avocado 2 tablespoons lemon juice 1/4 cup mayonnaise or salad dressing 1 3-ounce package cream cheese, softened 2 tablespoons sugar 1/4 teaspoon salt 1 16-ounce can pear halves, drained and chopped 1/2 cup whipping cream Lettuce Halve, seed, peel, and chop avocado; sprinkle with 1 tablespoon of the lemon juice. Blend together the remaining lemon juice, mayonnaise or salad dressing, cream cheese, sugar, and salt. Add chopped avocado, pears, and chopped maraschino cherries. Whip the cream till soft peaks form. Fold into cream cheese mixture. Pour mixture into 7 1/2x3 1/2x2-inch junior loaf pan. Cover and freeze till firm. To serve, let stand at room temperature about 10 minutes. Unmold. Slice and serve atop lettuce-lined salad plates. Makes 6 to 8 servings. |
