Lemon-Papaya Salad

1 3-ounce package lemon-flavored gelatin

1 cup boiling water

1 3-ounce package cream cheese, softened

1 egg yolk

1/8 teaspoon salt

1/2 cup dairy sour cream

teaspoon finely shredded lemon peel

1 1/2 teaspoons lemon juice

1 stiffly beaten egg white

1 medium papaya, seeded, peeled, and diced

Leaf lettuce

Dissolve gelatin in boiling water; cool to room temperature. In a large mixing bowl combine cream cheese, egg yolk, and salt; mix thoroughly. Stir in sour cream, lemon peel, and lemon juice. Stir cooled gelatin mixture into sour cream mixture. Chill till partially set. Gently fold in egg white and papaya. Chill till a most firm. Turn into a 4-cup ring mold. Chill till firm. Unmold salad on lettuce-lined platter. Makes 6 servings.
