Lemon-Frosted Plum Squares1 6-ounce package strawberry-flavored gelatin Dash salt 2 1/2 cups boiling water 1 cup lemon-lime carbonated beverage 2 tablespoons lemon juice 2 cups plums, pitted and cut in wedges (9 plums) 1 3 1/2- or 33/4-ounce package instant lemon pudding mix 1 1/4 cups cold milk 1/2 cup dairy sour cream Bibb lettuce Apple slices Dissolve gelatin and salt in boiling water. Cool to room temperature. Slowly pour in carbonated beverage and lemon juice; stir gently. Chill till partially set. Fold in plums. Pour into 8x8x2-inch pan. Chill till almost firm. In mixer bowl combine pudding mix and milk; beat till smooth. Blend in sour cream. Spread pudding mixture atop gelatin. Chill till firm. Cut into squares and serve on lettuce-lined plates. Garnish with apple slices atop each square, if desired. Makes 6 to 8 servings |
