Grape and Grapefruit Mold2 envelopes unflavored gelatin 1/2 cup sugar 1 cup boiling water 1 16-ounce can sweetened grapefruit sections Unsweetened grapefruit juice (about 1 1/4 cups) 1/4 cup lemon juice Several drops yellow food coloring 2 cups seedless green grapes Lettuce Dissolve gelatin and sugar in boiling water. Drain grapefruit, reserving syrup. Add enough unsweetened grapefruit juice to reserved syrup to make 2 1/4 cups. Add to gelatin mixture with lemon juice and food coloring. Chill till partially set. Fold grapefruit and grapes into gelatin. Carefully pour into 6-cup mold. Or, arrange a few of the grapes in bottom of mold; add gelatin to cover. Chill till almost set. Repeat with remaining grapes, the grapefruit, and gelatin, arranging fruit along sides of mold. Chill till firm. Unmold on lettuce-lined platter. Makes 10 to 12 servings. |
