Gazpacho Salad1 envelope unflavored gelatin 1/2 cup cold water 1 10 3/4-ounce can condensed tomato soup 1 tablespoon white wine vinegar Several drops bottled hot pepper sauce 1 medium tomato, chopped 1/2 cup peeled, seeded, shredded cucumber 1/2 cup chopped green pepper 1/4 cup finely chopped onion 1 6-ounce carton frozen avocado dip, thawed 1/4 cup mayonnaise or salad dressing 1/4 cup dairy sour cream 1 tablespoon lemon juice Several drops bottled hot pepper sauce In small saucepan soften gelatin in cold water. Stir in soup, vinegar, and several drops of hot pepper sauce; stir till gelatin dissolves. Chill mixture till partially set. Fold tomato, cucumber, green pepper, and onion into gelatin mixture. Pour into a 3-cup mold. Chill till firm. To make dressing, combine avocado dip, mayonnaise or salad dressing, sour cream, lemon juice, and several drops hot pepper sauce. To serve, unmold salad and serve with the dressing. Makes 4 or 5 servings. |
