Frozen Orange-Date Molds

1 8-ounce package cream cheese, softened

1/4 cup orange juice

1 8 1/4-ounce can crushed pineapple, drained

1/2 cup finely snipped pitted dates

1/2 cup chopped pecans

1/4 cup maraschino cherries, halved

1/2 teaspoon finely shredded orange peel

1 cup whipping cream

Lettuce

Beat together cream cheese and orange juice till fluffy. Stir in drained pineapple, dates, nuts, cherries, and orange peel. Whip the cream till soft peaks form. Fold whipped cream into cream cheese mixture. Spoon into 9 individual molds or one 8x4x2-inch loaf dish. Cover and freeze till firm. Let stand at room temperature 10 to 15 minutes before serving. Unmold onto lettuce-lined plates. Garnish with orange slices, if desired. Makes 9 servings.
