Coleslaw Vinaigrette

2 cups shredded cabbage

1/3 cup sliced green onion

1/4 cup snipped parsley

3 tablespoons vinegar

2 tablespoons sugar

2 tablespoons salad oil

1 teaspoon salt

2 hard-cooked eggs, chilled

Combine cabbage, onion, and parsley. Stir together vinegar, sugar, salad oil, and salt till sugar is dissolved. Pour vinegar mixture over vegetables; toss to coat vegetables. Cover and chill. Separate yolk from white of one hardcooked egg. Cut up white; toss with cabbage. Slice remaining egg; arrange atop salad. Sieve yolk over the egg slices. Makes 4 servings.
