Cinnamon-Apple Salads

1/2 cup red cinnamon candies

2 cups water

6 small tart apples, peeled and cored

1 3-ounce package cream cheese, softened

2 tablespoons milk

1 teaspoon lemon juice

1 8 1/4-ounce can crushed pineapple, drained

1/3 cup snipped pitted dates

2 tablespoons chopped walnuts


In 3-quart saucepan cook and stir cinnamon candies in water till dissolved. Add apples and cook slowly, uncovered, for 15 to 20 minutes or just till tender, turning once during cooking. Chill apples in syrup several hours, turning once. Blend together cream cheese, milk, and lemon juice till smooth. Stir in pineapple, dates, and walnuts. Drain apples; stuff center of each apple with some of the cream cheese mixture. Serve on lettuce-lined plates. Makes 6 servings.
