Carrots

The homeland of the carrots is considered to be South Europe. Carrots are one of the most popular root-crops that are used in nutrition. The carrot growing has developed and now there are several colour and sorts of carrots. Beside the known orange carrots there are also white and yellow carrots. In nutrition we use carrot root but in medicine roots, tops and fruits (seeds) can be used.

Carrot juice is very dietary and it is widely used in the medicine. Carrots improve appetite and digestion, normalizes the heart and blood vessels, liver, pancreas, kidney, and the activity of thyroid gland.

Carrots contain: sugar, a bit of proteins, organic acids, minerals- potassium, calcium, magnesium, iron, phosphorus, sodium, iron, chlorine, iodine, vitamins- group B, C, E, K, carotene and many vitamins, folic acid, fibre, a bit of fat, essential oils and other biologically active substances.

Fresh carrots should not be used if you have gastritis with high acid amount in the gastric juice and after the operations.

Diabetic patients have to take into account that many sorts of carrots contain quite a lot of sugar.

The carrots should be used in case of eye diseases, arthritis, liver disease, atherosclerosis, anaemia and for the strengthening of the organism.
